I have such lovely memories from this simple and moreish Anzac biscuit recipe and it started at my Grandmothers house. I can remember being about 5 and at around 10am I was allowed to sit in front of the television, watch cartoon network and have a cup of milky camp coffee (not sure why I was given coffee so young but never mind!) with an Anzac biscuit or two to dip in. Sometimes I wish I could go back in time and re-live those simple, great times. Anzac biscuits to me were know as ‘the biscuits grandma makes’ that lived in a large glass jar. As I have got older I have learned that these biscuits are actually popular in Australia and New Zealand and like many recipes, each slightly differ in ways. So I share with you my family’s version. And trust me they are good, they did not last long once my boyfriend had tried them.

These biscuits remind me of a flapjack (if it were a biscuit). They snap well and I recommend a good dunk in coffee or tea! Yum!! This recipe is in cup measurement, I do not try and work out the amount in other measurements, I just used a coffee cup for all ingredients and it makes them exactly how I remember them :).

Recipe

Makes 12-16 Prep Time 5 mins Cook Time 15-20mins Difficulty Easy

Ingredients

  • 1 Cup Flour
  • 1 Cup Oats
  • 1 Cup Desiccated Coconut
  • 1 Cup Sugar
  • 4oz Melted Butter
  • 1 Teaspoon Bicarbonate of Soda (mixed with a drop of water)
  • 2 Tablespoon Syrup
  • 1 Teaspoon Ginger

Instructions

  1. Pre -heat the oven to 180C and line a baking tray with grease proof paper.
  2. Mix all of the dry ingredients together in a bowl.
  3. Make a well and add the melted butter, the syrup and the bicarb of soda (that should be dissolved in a drop of water).
  4. Mix all the ingredients well to form a stiff dough.
  5. Roll little balls of mixture and put on the baking tray (leave space between them as they do ‘grow’ when cooking). Press the balls down slightly with a fork.
  6. Bake the biscuits for around 15 minutes or until they turn a dark golden color.
  7. Once baked, leave to cool slightly on the tray before scooping off as they will be very soft but will set hard.
