Hello! What a week I’ve had! Firstly, I didn’t intend for this post to be so late but I have had lots going on and I’ve been super busy, so i’m sorry about that. Secondly, excuse some of the prep pictures, they’ve come out a with a yellowish tint – I worked my best in quite bad lighting without a flash (darn daylight saving!!). And thirdly, in my last post I said I was going to post something nutritious next but I wasn’t quite satisfied with what I cooked up so it’s on hold until further notice 🙂

So, to this post 🙂 I made these shortbread biscuits last weekend whilst I was visiting my parents. I shared out the final biscuits and they went down very easy and well. This cherry and almond shortbread recipe is luxuriously sweet and a lovely treat to have in the house on the run down to Christmas. Also, they are very quick to make and there is no fuss afterwards with decoration – you can just get stuck in (once cooled of course!). My only tip is to use butter not margarine to get that melt in the mouth biscuit 😉

Recipe

Servings: 10 Prep Time 5mins Cook Time: 20 mins Difficulty: Easy

Ingredients

  • 240g / 5oz Plain Flour
  • 200g / 4oz Ground Almonds
  • 120g / 3oz Sugar
  • 280g / 6oz Butter
  • 100g / 2oz Glace Cherries (halved)

1. Line your baking tray with grease proof paper and preheat the oven to 180oc / gas mark 4.

2. In a bowl mix your flour, almonds and sugar in a bowl.Cherry and Almond Shortbread Recipe 1

3. Weigh out your butter and chop in to small squares and add to the mix. Using your fingers, rub in the butter.Cherry and Almond Shortbread Recipe 2

4. Once your mixture resembles breadcrumbs add your chopped cherries and knead your mixture into a dough.Cherry and Almond Shortbread Recipe 3

5. Flour a clean surface and roll out your dough, leaving the thickness around 2cm. Using a biscuit cutter, cut out your biscuits and place on the baking tray. Bake for around 20 mins (some may take up to 30 mins) but remember these shortbread biscuits are a pale biscuit so they don’t need to go golden brown in the oven. Leave to cool, and if you like, I love to lightly dust sugar on the top! 😀Cherry and Almond Shortbread Recipe 4

    Yummy! Will definitely make these again! Swapped the almond essence for vanilla (only as the hubby isn’t keen) and they were beautiful

    Have made these twice now as the recipe and they were great. Last for ages in stun. Well as long as not eaten! I’m going to vary recipe today and use chocolate chips in place of cherries . Just for a change .
