Creamy Cauliflower Soup Recipe

Ingredients
  • 1 Onion (roughly chopped)
  • 2 Cloves Garlic (crushed)
  • 1 Large Cauliflower (roughly chopped)
  • 1 Teaspoon Parsley
  • 1 Teaspoon Corriander
  • Salt & Peper
  • 1 litre Vegetable stock (can add more if necessary!)
  • A generous dash of double cream
Instructions
  1. Roughly chop the onion, garlic cloves and cauliflower and add to the pan.
  2. Pour in a litre of hot vegetable stock. Season the soup well. Add the parsley and coriander, mix well.
  3. Bring the soup to the boil and then turn down on to a low simmer for 30 minutes.
  4. Turn off the soup and blend well. Put the soup back on to the heat and add your generous dash of cream and gently heat and stir through for a minute.
  5. Serve up with some black pepper and crusty bread.
