Creamy Cauliflower Soup Recipe

- 1 Onion (roughly chopped)
- 2 Cloves Garlic (crushed)
- 1 Large Cauliflower (roughly chopped)
- 1 Teaspoon Parsley
- 1 Teaspoon Corriander
- Salt & Peper
- 1 litre Vegetable stock (can add more if necessary!)
- A generous dash of double cream
- Roughly chop the onion, garlic cloves and cauliflower and add to the pan.
- Pour in a litre of hot vegetable stock. Season the soup well. Add the parsley and coriander, mix well.
- Bring the soup to the boil and then turn down on to a low simmer for 30 minutes.
- Turn off the soup and blend well. Put the soup back on to the heat and add your generous dash of cream and gently heat and stir through for a minute.
- Serve up with some black pepper and crusty bread.
