In a bowl mix together the flour, sugar, baking powder, salt and cinnamon.
In a separate bowl whisk the egg, vanilla, milk and melted but cooled butter.
Mix the wet ingredients into the dry ingredients. The consistency should be thicker than pancake mixture but still loose enough to pour.
Heat up your waffle machine and grease according to instructions. I usually grease mine up with vegetable oil and heat it up to its highest setting as I like to think it makes it crispy on the outside whilst fluffy inside :) yum!
Pour your waffle mixture into your waffle iron and cook for 2 - 3 minutes. Again this may depend on your individual waffle machine.
Whilst your waffle is cooking, heat up the blueberries in a pan with the sugar. Reduce the blueberries down to they get a sticky and almost a jam-like texture.
Take out your cooked waffle and generously spoon on your sweetened blueberries and enjoy!
