Blueberry & Chocolate Granola Muffin Recipe

Ingredients
  • 4 Eggs
  • 2 Tablespoon Coconut Oil
  • 2 Teaspoon Honey
  • 100g Rye Flour (or wholemeal)
  • 50g Coconut Nectar (or brown sugar)
  • 100g Oats
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Cinnamon
  • Pinch of Salt
  • 100g Dried Blueberries
  • 50g Chocolate Drops
  • 50g Almonds (chopped)
Instructions
  1. Pre-heat the oven to 150C and line your muffin tray with muffin cases.
  2. Whisk together the eggs and honey.
  3. Melt the coconut oil and leave to cool slightly before adding it to the honey and eggs.
  4. In a separate bowl mix together the rye flour, coconut nectar, baking powder, cinnamon, salt and oats.
  5. Add the wet ingredients to the dry ingredients and mix.
  6. Add your blueberries, chocolate drops and nuts. Mix.
  7. Divide your mixture into your muffin cases and bake for around 25 minutes.
