Woah, this recipe is awesome!! I took this to work in a small container for my dessert and piled lots of lovely juicy strawberry’s on top and from everyone else looking in, it looked like a very naughty rich chocolate treat, yet they had no idea how healthy it actually was. I love it!

This mousse is perfect in texture. Smooth, creamy, filling and dreamy without any sin. Don’t knock this dessert until you have tried it :). You will be pleasantly surprised.There are ways to vary the taste of this healthy chocolate almond & avocado mousse recipe – you can add more or less almonds, or I found just adding a little sugar really did it for me (or you could use a healthier alternative). Next time I make this I’m going to melt a little dark chocolate and add that to sweeten it. This mousse is best served with strawberry’s, raspberry’s or amaretti biscuits and to make it that little bit extra special try piping it in to small ramekins for that added touch :). Recipe

Servings 2 Prep Time 5 mins Difficulty: Easy

Ingredients

  • 2 Ripened Avocados
  • 2 Tablespoons Almond Milk or Water
  • 3 Tablespoons Ground Almonds
  • 4 Tablespoons Cocoa Powder
  • 1 Teaspoon Vanilla Extract
  • Sugar, agarve syrup or honey to sweeten to taste (optional!!)

Instructions

1. Cut your avocados in to half, remove the stone and scoop out the filling (to cut in to your avocado run your knife over the skin, adding slight pressure. Once your ‘cut’ has met itself around the avocado then simply twist the avocado). Put the scooped avocado in to a food processor and blend with the almond milk or water. Blend until smooth.

2. Add your ground almonds, cocoa powder, vanilla extract and blend until fully mixed (you may need to use a spatula to make sure the mixture around the sides of the processor are blended in well).

3. The thing with this recipe is it is that every one likes different things, so at this point I recommend you try your mousse. If you like it the way it is then great 🙂 But I needed mine sweeter so added sugar. You can add more sugar if you like or use a sugar replacement such as agarve syrup or honey. Again just blend in until smooth.

4. Once everything is nicely blended in, just spoon your mousse into small ramekins and leave to chill for around one hour before serving. Serve with fruit, nuts, or my choice, amaretti biscuits :).

      They are surprisingly delicious! Again, you might need to sweeten them up a little (i have such a bad sweet tooth) but i make them instead of yogurts for work and its such a treat! 🙂

    Does this need to be eaten right away? Just wondering how the avocados hold up since they turn brown pretty quickly.

      Mine lasts around 3-4 days…if you are using very ripened avocados then I might advise you eat the sooner rather than later.
