Uni has finally hit me, and my oh my….it has been mad!! Very enjoyable, but very long days and some how I haven’t managed to switch off properly in the evenings yet. Who said students were lazy and did nothing hey?! One thing for sure I am trying to avoid eating too many baked beans and pasta for tea. Yes, I can now understand the reasoning behind this, long day at uni, socialising and then home with a pile of work,  the temptation  is there as well as keeping the costs low. But being such a foodie, I couldn’t cut it. It’s all about being prepared…like planning your food shop for the week, what is nutritious and quick?! Fish is always a good option, a piece of salmon can be baked in the oven and served with steamed veg….a fish finger sandwich another night too?  Or how about this delicious sticky honey and soy prawn stir fry. Full of veg, prawns and a tasty sticky sauce. It is worth that little bit of extra effort.

It’s the honey that really makes this stir fry, it adds thickness, texture and sweetness. I never used to add honey to a stir fry but I drizzle some in nearly every time now. Are you at university? Ingredients
  • For the marinade
  • 2 Tablespoon Soy Sauce
  • ½ Teaspoon Ground Ginger
  • 1 Teaspoon Chilli Flakes
  • 1 Tablespoon Honey
  • 240g King Prawns
  • For the stir fry
  • 1 Tablespoon Coconut Oil (or sunflower oil)
  • 1 Onion
  • 2 Cloves Crushed Garlic
  • 1 Pepper
  • 150g Broccoli
  • 1 Carrot
  • Handful of Runner Beans
  • 2 Teaspoon Sesame Seed Oil
  • 1 Teaspoon Chilli Flakes
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Honey
Instructions
  1. First you need to marinade your prawns. In a bowl mix together the soy sauce, ground ginger, chilli flakes and honey.
  2. Add the prawns and give them a good mix in the marinade. Cover the bowl with cling film and leave for at least 30 mins, the longer the better though!
  3. Chop up all of your vegetables (I like to grate carrots for stir fries, long thick slices).
  4. Heat up the coconut oil and add the chopped onion and garlic. Fry for 2 minutes.
  5. Add the broccoli and runner beans. Fry for a further 2 minutes.
  6. Add the sesame seed oil, chilli flakes, soy sauce, honey and stir.
  7. Add the prawns along with all the marinade.
  8. Add the carrot and fry everything for 5 minutes.
  9. Serve your stir fry with enough noodles for 2 people.
